    Turning on the stovetop heats up my kitchen much less than turning on the oven so when I craving pizza on a 90+ degree day last week this Low Carb Pizza in a Skillet was my solution.

    What type of dough for Skillet Pizza?

    This pizza uses my version of the popular Fathead pizza crust. The first place I ever saw a mozzarella dough was on Up Late Anyway with her Cheese Danish . Those are amazing. With a few tweaks, I made this dough savory for pizza and have used it ever since.

    Do you need a microwave for Fathead Dough?

    Nope! In the past, I've melted the cheese in the microwave but since I was going to use a frying pan anyway I decided to melt the cheese that way. It worked very well. So now I can also tell anyone without a microwave that they don't actually need one for a mozzarella dough.

    What should the cheese look like?

    You want the cheese to be runny and gooey before proceeding to the next step.

    Pizza Dough in the Food Processor

    I like to mix this dough in the food processor because it comes together without all the elbow grease of mixing by hand. It can be difficult to thoroughly incorporate the melted cheese if you mix it by hand.

    Cooking Pizza in a Skillet

    I didn't even wash the frying pan. I just pressed the dough into the bottom of it and turned the heat back on low.

    You can see how it is starting to puff up. You want the bottom to be deep golden brown before you flip it. I suggest loosening the entire thing with a spatula before attempting to flip it. Otherwise, it may break.

    What should the crust look like?

    See the deep golden brown? My pizza cracked a little while flipping but that doesn't impact the flavor. This is more of a fork and knife pizza than a handheld slice.

    What kind of sauce can I use?

    Flip, top, cover and finish cooking. I used vodka sauce on this because I love the flavor of it and I had a jar open in the fridge. A marinara sauce without added sugar is also a good choice. Other options are alfredo sauce or pesto .

    If you'd like a golden cheese crust you can pop this low carb pizza under the broiler for a couple of minutes to brown the cheese. I was feeling too hot to even turn on the broiler for 5 minutes.

    Or you can use a mini pastry torch to brown the cheese. My husband bought one for fun and it comes in handy on recipes like this.

    Ingredients

    Dough Ingredients:

    • 6 oz mozzarella cheese
    • 2 oz cream cheese
    • ½ cup almond flour
    • ¼ cup coconut flour
    • 1 egg
    • 1 teaspoon garlic salt
    • 1 teaspoon baking powder

    Toppings:

    • ¼ cup marinara or vodka sauce
    • 1 cup shredded cheese of your choice

    Instructions

    • Melt cheeses in a medium sized frying pan. Add melted cheese to a food processor with the other dough ingredients. Pulse into a dough forms. Press into the bottom of the medium frying pan.
    • Cook the dough on low heat, covered, for 10 minutes. Raise heat to medium and cook for an additional 4-5 minutes until deep golden brown on the bottom. Carefully flip the dough.
    • Put the toppings on the dough. Cover, reduce heat to low and cook for an additional 10 minutes or until cooked through.

      What went wrong??? Followed recipe exactly, "crust" rose nicely, but stuck to the pan horribly! what a big mess inedible and fell apart Thought cheese had enough grease so didn't put any extra in pan. Rrecipe didn't specify adding extra fat to prevent sticking.

        You may have needed to cook it longer. When the crust gets very dark it naturally releases from the pan. I do not normally grease the pan when I make this. What type of pan do you have? Mine is hard anodized aluminum (not nonstick).
