Free Guide! Feed a Family on a Low Carb Diet

In this free 5-day email series learn all my tips for incorporating a low-carb lifestyle into the life of your family.

As soon as the spring and summer months hit, I think we all just get a craving for smoked meats. Barbecues and parties become second nature when it warms up. But I wanted to be able to make a delicious pulled pork even when the weather wasn’t so great. That’s why I decided it was time to develop an easy keto pulled pork recipe that can be made quickly and easily in your pressure cooker.

Don’t get me wrong; I love the flavor and texture of pork that has been smoking for hours and hours. There is always a time and place for it. But I am a mom and don’t always have the time or energy to put in that much effort. Putting the ingredients for the pulled pork in the Instant Pot saves me time, and I can spend more time doing other things. Like making these low carb brownies to serve as dessert.

How To Make Keto Pulled Pork

You seriously will be so glad you learned how to make this pulled pork in your pressure cooker. It’s a quick and easy method that produces the juiciest pulled pork ever! Plus, it still has a lovely smoked flavor from the paprika.

Keto pulled pork ingredients include a bowl of boneless pork shoulder, smoked paprika, salt and pepper, and garlic powder

First Step: Cut up the boneless pork shoulder and cut it into chunks.

Second Step: Add the pork shoulder, smoked paprika, garlic powder, salt, and pepper in the Instant Pot.

Third Step: Put the lid on the pressure cooker and set it to manual high and cook for 40 minutes. Make sure that you have the valve set to the sealed position.

Fourth Step: Allow the pressure to do a natural release for at least 10 minutes. Once the ten minutes are up, you can finish with a quick release to remove the rest of the pressure.

Fifth Step: Transfer the meat to a large bowl and discard the liquid. Use meat shredder claws or two forks to shred the pork. Serve with your favorite sugar-free barbecue sauce and enjoy!

    How to Serve Shredded Pork:

You can serve the pork any way you like. We love to just eat it plain with a drizzle or two of barbecue sauce. You can also eat it as a lettuce wrap by adding some pulled pork and some cheese and wrapping it like a burrito. It’s delicious that way!

You can serve it with some low carb bread or dinner rolls too. Another way we enjoy it is with a helping of coleslaw on top.

We pretty much eat cauliflower potato salad , green salads, or roasted veggies as side items with this pulled pork recipe. Serve it with all your favorites and dig in!

Can You Eat Pork On A Low Carb Diet?

Yes, of course, you can eat pulled pork on a low carb diet. Pork doesn’t have any carbs, so it’s ideal for eating when on a keto diet. Keep in mind, the meat is keto-friendly, but it’s often the sauce and side items that aren’t. Those are what you should be looking out for when it comes to eating healthier.

Is It Possible To Make Pulled Pork In The Crockpot?

Yes, you actually can make this keto pulled pork in the slow cooker if you would rather. I love making it in the Instant Pot because it’s juicy, tasty, and takes practically no time. However, cooking it in the crockpot is a great option as well. You will just need to follow the same directions except let it cook on low for 8 hours. It should be falling apart tender when it’s done.

    Equipment

    Instant Pot

    Ingredients

    • 5 lb boneless pork shoulder cut into chunks
    • 2 tablespoon smoked paprika
    • 2 tablespoon garlic powder
    • 1.5 tablespoon salt
    • 1 tablespoon black pepper
    US Customary - Metric
Prevent your screen from going dark

    Instructions

    • Add all the ingredients to the instant pot and mix well.
    • Cook on manual high for 40 min.
    • Let the pressure release naturally for at least 10 min. After that, you can release the pressure manually.

    Notes

To Reheat: you can reheat the pork by warming it in the microwave. Another option is to heat it in a skillet, but it will become crispier if you go this route.
To Freeze: Freeze the shredded meat in ziplock bags or containers. You can freeze the entire batch together or make individual servings. It will last 6-8 months in the freezer.
Liquid in Instant Pot: This works in my older Instant Pot without any added liquid which helps brown the chicken. In my newer Instant Pot, I do get a burn warning. If your Instant Pot gives you a burn warning add 4 ounces of water or chicken stock.

Can you make this with a pork loin? Do you still cut up the meat into chunks?

The lower fat content of pork loin makes it much harder to shred. I wouldn't recommend it.

My Instant Pot gave a burn notice since there was no water with it.

Which IP do you have? I've made this at least 50 times and never gotten a burn warning. If that happens add a very very small amount of water. Maybe 2 tbsp at a time until it no longer says that.

every single instapot recipe I've ever tried says at least a cup of water or broth. You can also use a tsp of liquid smoke instead of paprika.

It depends on your instant pot whether this will work or not. My newer model does need a bit of water or I do now get a burn warning. My original instant pot never gave me a burn warning.

Love this recipe! I’ve been making it every week, the last few times the pork hasn’t shredded...I also had kind of cut it up to season it more fully—should I not cut the pork up at all? It also may be that it wasn’t the right weight... 5 stars

You can cut it up if it's a big piece. But, you could also just add more of the rub to taste after shredding it. Did you use a different cut of pork? Leaner cuts don't shred as easily.

Any suggestions for doing this in a crockpot instead?

I'd do it on high for 5-6 hours.

I used this combination of spices in my crock pot. I reduced a bit since I had less than 5 pounds of pork.
Way over-spiced, especially the salt. Disappointed and I should have realized 1 and 1/2 tablespoons of salt seemed like too much.

I rinsed all the meat and hope to counteract with sweetener to rescue all that pork.

The recommended salt to meat ratio is 3/4 to 1 tsp per pound. Using 1.5 tablespoons for 5 pounds of pork is within that range. How much salt did you use for how much pork?

No where does it say how much liquid you are adding or what type. 1 cup of water?

No liquid. The meat releases enough. I never add any with this recipe and it works fine!
