    I love how eggs and spinach pair together so well. This simple recipe is the perfect way to add an extra boost of nutrients and health to the start of each and every day. Forget about the days of just scrambling eggs and eating them, and up your egg game to this simple omelette.

    Not only is it fast to make, but it's one that kids and adults will love. You can even change up the ingredients as you see fit, and we'll dive into those options further below.

    Ingredients

    Eggs - Use your favorite brand and size of eggs. Large or extra large eggs are the most common.

    Cottage cheese - Adding cottage cheese is perfect for more protein and also makes the omelet light and fluffy.

    Fresh spinach - Fresh spinach adds a kick of health and a great texture. Frozen spinach can be used, but you have to be extremely careful and get out as much liquid as you possibly can.

    Feta cheese - This salty cheese is the perfect boost of flavor.

    Salt and pepper - To taste. Since this is a single serve recipe you can just season when you eat it if you prefer.

    How to make a Spinach Feta Omelet

    The instructions below show how simple and easy this breakfast recipe is. Enjoy the process and the end result!

    Step One : Combine the eggs with 2 tablespoons of cottage cheese, salt, and pepper in a blender.

    Step Two: Blend until smooth.

    Step Three: Heat a 9-inch frying pan over medium heat. Spray with cooking spray. Saute the spinach for about 15-30 seconds until it just starts to wilt. Remove from the pan and set aside.

    Step Four : Pour the egg mixture into the pan. Cook for 5-6 minutes until the eggs are mostly set.

    Step Five : Add the spinach and feta to half of the omelet.

    Step Six : Flip the other half over the cover filling. Serve immediately. You can sprinkle extra feta cheese on top if you like.

    Variations

    Add fresh herbs - Parsley would be delicious on this feta omelette. You can also add chives to the sauteed spinach or even some garlic powder or minced garlic.

    Add more veggies - Chop up some red peppers and add them to the mix. Cherry tomatoes are also delicious to add as well.

    Add heat - If you want to change the flavor, add a little bit of hot sauce! More ground pepper can also be added for a more subtle spice.

    Add meat - If you want protein, add chopped ham to half the egg omelet and fold it over to keep it inside.

    Common Questions

    What is the best way to cook spinach and eggs?

    Make sure that you're using a nonstick skillet and a rubber spatula during the cooking process. This will help the edges of the omelet not stick during the process, making it easier to fold over half of the egg.

    You can add some coconut oil to a hot pan to help the egg not stick.

    What foods pair well with eggs?

    If you want to cook up some toast to have as a side dish, that is always a great option. You can also have a medium bowl of fresh fruit as a sweet treat.

    How can I cut down the prep time to make an omelet?

    Just be sure that you have all the ingredients on hand before starting. Also, make sure that you have all the utensils ready to go, as that will save you time as well. Have your whisk ready, your pan ready, and your spatula. Don't forget a mixing cup or a large mixing bowl as well.

    Why is my spinach feta omelet soggy?

    If you're using baby spinach, that is frozen, you have to make sure that you're squeezing out as much water as you possibly can. This is why I tend to use fresh spinach because the excess water that comes from frozen spinach as it thaws can really mess up the outcome.

    Thaw the spinach completely, and then literally squeeze out the excess water with your hands. You may have to do this several times to get the water completely drained out.

    If you can use fresh, do so. If you have to use frozen, you need to really dedicate time to getting it as dry as possible so that the water doesn't change the outcome.

    How do restaurants make omelets so fluffy?

    Restaurants make omelets so fluffy by adding air to the eggs. They do this by whisking the eggs until they are light and frothy. This adds tiny bubbles of air to the eggs which makes them much lighter and fluffier. I find it easier to do this in a blender but you can just whisk by hand if you prefer.
