    This is my favorite recipe when I'm craving something fast and delicious. You know what I'm talking about, right? Those cravings just seem to hit out of nowhere and have you scouring the cabinets for something to snack on. What I love about these healthy snacks is that they're really simple and easy to do.

    It's really important to me to have energy bites in the house that everyone likes to eat. This makes it super simple to curb that sweetness craving while fueling our bodies with a little bit of health. I've made these for the kids - and they love them. I've made these for parties, and they're always a hit.

    I've also made these as a great companion to have with my cup of coffee in the morning. It's great being an adult and feeling like you can indulge in the AM with a treat like this!

    Ingredients

    The simple ingredients listed below are all that you'll need to get started. It couldn't be easier to whip up this tasty treat.

    Hemp hearts - I love using hemp hearts because they're good for heart health and a lower carb option than oats. If you don't mind an extra gram of carbs per ball my kids prefer these made with old-fashioned rolled oats.

    Shredded coconut - Make sure that it's unsweetened, so you're not getting any extra sugar added in.

    Almond butter - Almond butter is perfect for binding together the other ingredient and also adding healthy fat.

    Powdered sweetener - You can use any sweetener of your choice for this.

    Cocoa powder - This adds dark coloring and also adds that delicious chocolate flavor. You can use cacao powder if you prefer. They are interchangeable.

    Coconut oil - Using coconut oil helps the chocolate bites not to be dry.

    Sugar free chocolate chips - This is a great way to add flavor. You can use any type of chocolate chips that you want: milk chocolate, semisweet chocolate, dark chocolate, or even white chocolate.

    How to make this Gluten-Free Chocolate Bliss Balls Recipe

    Are you ready for the ease of this dish? You're going to love making these energy balls!

    Step One: Add all the ingredients into a mixing bowl and stir.

    Step Two: The dough mixture will be thick but continue stirring until mixed all the way.

    Step Three: Use a spoon or a cookie scoop and make 24 small chocolate balls. Put on a baking sheet lined with parchment paper and then place them in the fridge to chill for 1 hour.

    Variations

    Use a different nut butter - Peanut butter, cashew butter, or other types of nut butter can easily be used in place of almond butter.

    Nut-free - Use sunflower seed butter to make these nut-free. Chia seeds are a good nut-free mix-in.

    Add natural sweetness - Drizzle a little bit of honey or maple syrup into the mixture.

    Add dried fruit - Fruit that is naturally dried without added sugar is always a good addition. Medjool dates or dried cherries would be yummy. You can just chop them up in the food processor as well. (Pitted dates would work as well)

    Add chopped nuts - If you can finely chop nuts, you can add cashews or walnuts to the mix.

    Common Questions

    Can you meal prep these ahead of time?

    Absolutely. Once you make them, just keep them stored in an airtight container in the fridge. I think that making them 24 hours in advance is a great idea. That way, they're firm and blended well and chilled to enjoy.

    While these can be eaten at room temperature, I like their texture when they're cold. You can always set them out about 10 minutes head of time if you want them at room temperature because they're going to thaw really quickly.

    How do I keep the mixture from sticking to my hands?

    Since you're rolling them into bite-sized balls, you can add a little bit of hot water to your hands to help keep the ingredients from sticking. (just a very tiny amount, as you don't want to make them soggy or covered in water)

    Can I freeze these bites?

    Yes, you can! Store them in a freezer-safe bag and keep them in your freezer. You can also eat them frozen, as they have a great texture that way, too.

    Once you take a bite, the warmth of your mouth will start to thaw them and create a creamy texture that is crazy good! Skip buying these are the supermarket and make these dairy-free treats right at home!

    Ingredients

    • 1 cup hemp hearts or oats
    • 1 cup shredded coconut unsweetened
    • 1 cup almond butter
    • ½ cup powdered sweetener
    • ½ cup cocoa powder
    • ¼ cup coconut oil melted
    • ⅓ cup sugar free chocolate chips

    • Stir together all the ingredients. Chill for at least an hour.
    • Scoop 24 small balls. Store in the refrigerator.

    Notes

    Nutrition: The nutrition facts are for one ball when made with hemp hearts. With hemp hearts each bite has 6.2 net carbs. Made with oats they will each have 136 calories and 7.8 net carbs.
    Powdered Sweetener: I prefer a powdered sweetener such as Swerve Confectioner's , Anthony's powdered erythritol , or Powdered Lakanto to avoid a gritty sensation.
