    This Zesty Chicken & Onion Low Carb Flatbread has layers of cheese, sauteed onions, chicken, cilantro, and lime crema. It is an excellent lunch, dinner, or party appetizer. No one will ever know that it is actually a better for you choice with just 4.2 net carbs.

    As a stay-at-home mom of four, I find that a good portion of my day goes into feeding my family. Sitting around the dinner table almost every night is one of the highlights of our day. We talk about the things that happened at work or at school and share our lives. We'll discuss plans for the future and talk about our extended family and friends. It is important to have moments together as a family.

    This is one of the best things I've ever eaten. And definitely the best low carb flatbread. I think it even beats all the 'real' wheat flour restaurant flatbreads I've tried over the years.

    Dough Ingredients

    Shredded mozzarella - This is used to create a delicious flavor in the bread and also help bind as it melts. Other types of cheeses can be used here as well.

    Cream cheese - I prefer using full fat regular cream cheese.

    Almond flour - Great texture and flavor. You can grind your own almond flour or buy it at the store.

    Coconut Flour - Gives the crust an added hint of coconut taste without being sweet.

    Ground Golden Flax - You can also just use more almond flour as well.

    Baking powder - For texture.

    Eggs - The main binding agent in the dough.

    Topping Ingredients

    Olive oil - This is the "sauce" that pairs well with any added ingredients.

    Onions - I like using sweet onions that are thinly sliced or chopped.

    Cooked chicken - You can use leftover chicken, canned chicken, etc.

    Pepper jack cheese - This is my favorite type of cheese for a little bit of kick.

    Mild Cheddar cheese - Any type of cheddar cheese works fine.

    Cilantro - Fresh cilantro adds a great pop of flavor.

    Sour cream - Greek yogurt is an option, too.

    Lime juice - Lemon juice would be delicious as well.

    Salt - To taste.

    How to Make Low Carb Flatbread

    This recipe makes 2 big gluten-free flatbread. It is enough to serve 4 as a main course or 8 as an appetizer. You can halve this recipe to make one flatbread if you choose.

    Step One: Preheat the oven to 400.

    Step Two: Put mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave one minute. Stir. Microwave 30 seconds. Stir. At this point, all the cheese should be melted. Microwave 30 more seconds until uniform and gooey (it should look like cheese fondue at this point. If it doesn’t, keep microwaving in 30-second increments). Mix in the flours, flax, baking powder, and egg. You will need to dump it onto wax paper and knead it by hand to thoroughly incorporate the ingredients, or you can do this in a food processor with the dough blade.

    Step Three: Divide the dough into two pieces. Using wet hands, press out into two rectangular pieces on a parchment lined baking sheet. Bake the dough for 10 minutes.

    Step Four: Meanwhile, saute the onions in a large frying pan over medium-high heat in the olive oil until they are softened and browned.

    Step Five: When the dough has baked for 10 minutes, it is ready for the toppings. Put 3 pieces of the pepper jack cheese on each flatbread, top with 3 slices of mild cheddar cheese. Next, layer on the chicken and onions. Return to the oven for 8-10 minutes until the cheese has melted and the toppings are hot.

    Step Six: Meanwhile, stir together the sour cream, lime juice, and pinch of salt. Put into a zip top bag, and cut a small piece off one corner so you can drizzle it on the cooked flatbread.

    Step Seven: When the flatbread is done, drizzle on the lime crema, sprinkle the cilantro on top, slice, and serve. For added zest, sprinkle a little crushed red pepper on top.

    Variations

    This easy keto flatbread recipe can be changed up to fit your keto diet and low carb needs.

    Change up the type of oil - You can use coconut oil or avocado oil.

    Turn it into a sandwich - The flatbread pizza is great, but you can make the dough into smaller pieces and make a sandwich as well!

    Common Questions

    How do I make this mess free?

    I like to use parchment paper because I can then bake the pizza crust right on it, and then ball it up and throw it away when done. It doesn't get any easier than that!

    Can I make this dough and crust and use it for other recipes?

    You can. If you just want to eat it without the toppings, it's so good to dip it right into hummus!

    • ⅔ cup almond flour
    • ⅓ cup coconut flour

      It says the total servings are 12 and that one piece is 4.2 net carbs. Does this mean there are 25.2 net carbs for one of the two flatbreads?

        Yes, they are pretty large. That number includes the toppings, and onions are fairly carby. If you want to calculate different toppings each flatbread crust has a base net carb count of 13.2.

      Could you make the bread cook 10m and then freeze for future use? How would you go about using it from frozen?

        I would completely cook the bread and then freeze it. This type of dough freezes ok but not great. If you made it into smaller flatbreads you could just pop them in the toaster to reheat. If not just bake again until hot.
