Free Guide! Feed a Family on a Low Carb Diet

In this free 5-day email series learn all my tips for incorporating a low-carb lifestyle into the life of your family.

Doesn't everyone love a good homemade sauce? And when this sauce is low carb and takes just four simple ingredients, it's just that much better! The warmth and richness of this tomato sauce are what keep me coming back for more. I've used this recipe for easy addition to a quick meal or to add flavor and depth to a variety of dishes.

The simple instructions are great - and the flavor is really, really good. In fact, you might have some people in the house dipping their spoons in just to take a bite of the sauce.

Use this creamy tomato sauce on your favorite pasta dish or any way that you want. If you use it for something unique and delicious, make sure to come back and tell me so that I can try it too.

    Ingredients

Marinara sauce - You can buy your favorite marinara sauce from the store or make your own with chopped tomatoes and herbs/spices.

Mascarpone cheese - This is a type of sweet cheese that adds so much flavor to the dish.

Chicken broth - you can also use vegetable broth, chicken stock, vegetable stock, or even bone broth if you're looking for ways to add more protein.

Salt - To taste. Adding a bit enhances the other flavors.

How to Make Tomato and Mascarpone Sauce

To make the sauce recipe, just gather up the needed ingredients to get started.

Step One: Combine all the ingredients in a blender. Blend until smooth.

You'll have to blend for a short time to get it all smooth.

blender of thick creamy pink mixture

Some of the sauce might get up onto the sides of the blender, so be sure to power off and use a rubber spatula to scrape it down.

    blender with thin liquid

Step Two: Transfer to a saucepan or skillet. Heat until hot, whisking occasionally. Do not let the sauce come to a boil.

    Variations

Add seasonings - You can easily add garlic/fresh garlic cloves, pepper, fresh basil leaves, oregano, chili powder, or any other seasonings that you'd like.

Add veggies - If you want to make it a thicker sauce or add some more health benefits, you can add chopped spinach, caramelized onions , cooked sliced mushrooms, or even a little bit of kale.

Parmesan - You can also add some parmesan cheese to the sauce as well, but just be careful with adding too much as it will make the sauce a lot thicker.

Spicy - You can make this sauce as spicy as you want. Adding in some red pepper flakes and some chili flakes is a great way to add spice to the dish.

    Common Questions

What does this simple sauce pair well with?

While I tend to pair it with low carb options, you can literally use it on top of any food that you want! This would be delicious on linguine, penne pasta, or any other type of noodles or pasta recipe.

I love adding this to grilled or baked chicken, like this Italian Herb Chicken , and I've even drizzled it on top of my cooked veggies as well. It's delicious with broccoli and zucchini - I promise!

If you're a fan of cauliflower rice, this is a fun way to add flavor without adding any guilt. I always drizzle a few teaspoons on top of my dishes when I want to change up the flavor a bit. This sauce lets me do that without committing to covering it all.

It is also fun to soak up with some Keto Focaccia or keto garlic bread.

How do I store leftover mascarpone pasta sauce?

Be sure that you let the sauce cool down all the way before storing it in an airtight container. The leftovers do need to be stored in the fridge. I like adding them to a mason jar with a lid.

Can I freeze this homemade sauce?

I don't recommend freezing this sauce recipe. It's best served fresh and enjoyed as leftovers over the course of 2-3 days. If you need to make it ahead of time, you can always make it 1-2 days in advance and then have it to reheat and enjoy when you're ready.

Remember that it can be simple and easy to use the leftover sauce on a variety of dishes, so have fun with the process and enjoy. Since it's so versatile in the way that it tastes, it doesn't have to be used for just one meal!
